2 packages (3 oz each) of strawberry-flavored gelatin
2 cups boiling water
2 cups cold water
1 cup sliced fresh strawberries
1 cup crushed pineapple, drained
1 cup sliced bananas
1 cup mini marshmallows
1 cup whipped topping, such as Cool Whip
1 package (8 oz) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
Instructions
In a large mixing bowl, dissolve the strawberry-flavored gelatin in 2 cups of boiling water. Stir well to ensure the gelatin is completely dissolved.
Add 2 cups of cold water to the gelatin mixture and stir until combined. Allow the mixture to cool to room temperature for about 15-20 minutes.
Once cooled, pour the gelatin mixture into a 9x13 inch glass dish. Gently layer the sliced strawberries, crushed pineapple, and sliced bananas evenly over the gelatin. Refrigerate for about 1-2 hours, or until partially set.
While the gelatin is setting, prepare the creamy layer. In a separate bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and vanilla extract, mixing until creamy.
Fold the whipped topping into the cream cheese mixture until well combined.
Once the gelatin is partially set, gently spread the creamy layer over the top, smoothing it out with a spatula.
Sprinkle mini marshmallows over the creamy layer for added texture.
Return the dish to the refrigerator and chill for an additional 2-3 hours, or until fully set.
Before serving, slice the salad into squares or scoop with a large spoon.
