16 large cremini or button mushrooms
1 cup of fresh breadcrumbs
4 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
2 cloves of garlic, minced
1 small onion, finely chopped
1 tablespoon chopped fresh parsley
1 teaspoon dried Italian herbs (oregano, basil, thyme)
Salt and pepper to taste
2 tablespoons olive oil
Cooking spray (optional)
Instructions
Preheat your oven to 375°F (190°C) and prepare a baking tray by lightly greasing it with olive oil or cooking spray.
Gently clean the mushrooms with a damp cloth to remove any dirt. Remove the stems and set them aside. Place the mushroom caps on the prepared baking tray, hollow side up.
Finely chop the reserved mushroom stems. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped mushroom stems, onion, and garlic until the onion turns translucent, about 4-5 minutes.
In a large mixing bowl, combine the sautéed mixture with breadcrumbs, cream cheese, Parmesan cheese, mozzarella cheese, parsley, dried herbs, salt, and pepper. Mix until well combined.
Using a small spoon, generously fill each mushroom cap with the stuffing mixture.
