1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 packet taco seasoning
1 cup salsa
2 cups shredded cheddar cheese (for a cheesy taco casserole)
1 cup sour cream (for a sour cream taco casserole)
6-8 tortilla chips (for taco casserole with tortilla chips)
1 cup diced tomatoes (for topping)
1/2 cup sliced jalapeños (for a spicy taco casserole)
1/4 cup chopped fresh cilantro (for topping)
1 avocado, diced (optional, for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 3-4 minutes, allowing the flavors to meld.
In a 9x13 inch baking dish, spread half of the beef mixture evenly across the bottom. Add a layer of 1 cup of shredded cheddar cheese over the beef.
Add the remaining beef mixture on top of the cheese. Spread the sour cream over the top, then add the rest of the cheese.
Crush the tortilla chips and sprinkle them generously over the top of the casserole.
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
Once out of the oven, let the casserole cool for a few minutes. Top with diced tomatoes, jalapeños, cilantro, and avocado if desired.
