1 lb ground beef
1 packet taco seasoning mix
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup shredded cheddar cheese
1/2 cup black beans, rinsed and drained
1/2 cup corn kernels, cooked
1 avocado, sliced
1/4 cup sliced olives
3 green onions, chopped
Optional: 1/2 cup crushed tortilla chips
1/2 cup sour cream
1/4 cup salsa
2 tablespoons lime juice
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Instructions
Prepare the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned, about 8-10 minutes. Drain excess fat. Stir in the taco seasoning mix and 2/3 cup water. Simmer for about 5 minutes or until the sauce has thickened.
Prepare the Salad Base: While the beef is cooking, rinse and chop the romaine lettuce. Place it in a large salad bowl.
Add Fresh Ingredients: Top the lettuce with cherry tomatoes, cheddar cheese, black beans, corn, avocado slices, olives, and green onions.
Assemble the Salad: Once the beef is ready, allow it to cool slightly, then add it to the salad bowl.
Prepare the Dressing: In a small bowl, combine sour cream and salsa. Add lime juice, cumin, chili powder, and salt and pepper. Mix well.
