2 lbs ground beef
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, diced
2 cups diced tomatoes (canned or fresh)
2 cups beef broth
2 cups elbow macaroni
2 cups mixed vegetables (peas, corn, or carrots)
2 tablespoons paprika
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon salt (adjust to taste)
1 teaspoon cayenne pepper (optional for heat)
2 tablespoons olive oil
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes, or until the onions are translucent and the peppers are tender, stirring occasionally to prevent sticking.
Add the minced garlic and continue to sauté for an additional minute, until fragrant.
Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, breaking it apart with a spatula, about 7-10 minutes.
Once the meat is cooked through and no longer pink, drain any excess fat from the pot.
Stir in the diced tomatoes, beef broth, mixed vegetables, paprika, oregano, black pepper, salt, and cayenne pepper (if using). Bring the mixture to a boil.
