  2. Wash the russet potatoes thoroughly under running water to remove any dirt. Prick them several times with a fork to allow steam to escape and prevent them from bursting. Place them directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and let cool for about 10-15 minutes.
  3. Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the insides into a large mixing bowl, leaving a small border of potato inside the skins.
