Ingredients
Scale:
1 lb ground beef
1 packet taco seasoning
1 cup salsa
1 can (15 oz) black beans, rinsed and drained
2 cups corn tortilla chips
2 cups shredded cheese (cheddar or Mexican blend)
1 cup sour cream
1 cup diced tomatoes
1 cup shredded lettuce
1/2 cup sliced green onions
Jalapeños (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Make sure to break it apart with a spatula as it cooks.
Once the beef is browned, drain excess fat, if necessary. Stir in the taco seasoning and salsa, mixing well. Cook for an additional 2-3 minutes until heated through.
In a greased 9x13 inch baking dish, layer half of the tortilla chips on the bottom. Top with the seasoned beef mixture, then sprinkle half of the black beans and half of the cheese over the top.
Add the remaining tortilla chips, followed by the rest of the black beans and cheese. Ensure an even distribution.
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
Once baked, remove the casserole from the oven and let it cool for about 5 minutes.
Top with sour cream, diced tomatoes, shredded lettuce, green onions, and jalapeños as desired before serving.
