1 pound ground beef
1 packet taco seasoning (about 1 ounce)
1 cup salsa
1 can black beans, drained and rinsed (15 ounces)
1 cup corn (frozen or canned)
3 cups tortilla chips
2 cups shredded cheddar cheese
1/2 cup sour cream (optional for serving)
Green onions, diced (for garnish)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
Sprinkle taco seasoning over the cooked beef and add salsa, black beans, and corn. Stir to combine and simmer for 3-5 minutes.
In a greased 9x13 inch baking dish, spread half of the beef mixture, then layer with tortilla chips and 1 cup of cheese. Repeat layers and top with remaining cheese.
Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
