Description
A classic Mediterranean dish made with cannellini beans, garlic, herbs, and lemon juice.
Ingredients
Scale:
- 1 1/2 cups of cannellini beans, drained and rinsed
- 1/4 cup of extra-virgin olive oil
- 2 cloves of garlic, minced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh basil, chopped
- 2 tablespoons of freshly squeezed lemon juice
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- In a large bowl, combine the cannellini beans, garlic, parsley, and basil.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and red pepper flakes (if using).
- Pour the dressing over the bean mixture, and toss to combine.
- Let the salad sit at room temperature for at least 30 minutes to allow the flavors to meld together.
- Before serving, taste the salad and adjust the seasoning as needed.
- Serve the salad chilled or at room temperature, garnished with additional parsley and basil if desired.
