White Bean Salad

Description

  1. In a large bowl, combine the cannellini beans, garlic, parsley, and basil.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and red pepper flakes (if using).
  3. Pour the dressing over the bean mixture, and toss to combine.
  4. Let the salad sit at room temperature for at least 30 minutes to allow the flavors to meld together.
  5. Before serving, taste the salad and adjust the seasoning as needed.
  6. Serve the salad chilled or at room temperature, garnished with additional parsley and basil if desired.
