  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Incorporate the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. While the cookies are cooling, prepare the cream filling by beating the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until smooth and creamy. Add milk until the desired consistency is reached.
  9. Once the cookies are completely cool, spread or pipe a generous amount of cream filling onto the bottom side of half of the cookies. Top with another cookie to create a sandwich.
