2-3 medium apples (approximately 3 cups of chopped apples)
1 tablespoon of sugar (adjust based on the sweetness of apples)
1 teaspoon of cinnamon (optional)
1 package of pre-made pastry dough (such as puff pastry or pie crust)
1 egg (for egg wash, optional)
Instructions
Begin by peeling, coring, and chopping the apples into bite-sized pieces. Place them in a mixing bowl.
Add the sugar and cinnamon to the chopped apples. Toss to combine and let them sit for about 10 minutes.
Preheat your oven to 375°F (190°C).
On a lightly floured surface, roll out the pastry dough to about 1/8 inch thickness.
Use a round cutter or a glass to cut out circles from the dough, about 4-5 inches in diameter.
Gently press each circle of dough into the muffin tin's cups.
Spoon the apple mixture into each pastry cup, filling each to the brim.
Beat the egg in a small bowl and brush a little over the exposed dough.
Place the muffin tin in the preheated oven and bake for 15-20 minutes, until the pastry is golden brown.
Remove the cups from the oven and let them cool slightly before serving.
