1 cup sugar (alternatively, 1/2 cup granulated and 1/2 cup brown sugar for richness)
1 teaspoon baking soda
1 teaspoon baking powder
2 large eggs or flax eggs for vegan banana bread options
1/2 cup oil or melted butter (coconut oil or applesauce can be used as substitutes)
1/4 teaspoon salt
1/2 cup chopped walnuts for banana bread with walnuts
1/2 cup chocolate chips for banana bread with chocolate chips
1 teaspoon vanilla extract
1 teaspoon cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
In a large bowl, mash the ripe bananas for baking until smooth.
In another bowl, whisk together the flour, baking soda, baking powder, and salt. Add the sugar to the mashed bananas along with the eggs and oil, mixing until combined. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be cautious to avoid overmixing.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
