Ingredients
Scale:
3 ripe bananas, mashed
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup chopped walnuts or pecans (optional)
8 oz cream cheese, softened
1/2 cup unsalted butter, softened (for icing)
4 cups powdered sugar
1 teaspoon vanilla extract (for icing)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, combine the mashed bananas and buttermilk. Mix until smooth.
In another bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the flour mixture to the butter mixture, alternating with the banana mixture. Start and end with the flour mixture, mixing until just combined. Do not overmix.
If desired, fold in the chopped nuts for added texture.
Pour the batter into the prepared baking pan and spread evenly.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
While the cake is cooling, prepare the cream cheese icing. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Once the cake is completely cooled, spread the cream cheese icing generously over the top. Slice and serve!
