  1. In a large mixing bowl, combine the mixed nuts and crushed graham crackers. Ensure the nuts are evenly distributed for a balanced texture. Set aside.
  2. In a medium saucepan over medium heat, combine the granulated sugar, unsalted butter, and light corn syrup. Stir continuously until the mixture comes to a boil.
  3. Once boiling, continue to stir for about 3–5 minutes, or until the mixture reaches a soft-ball stage (approximately 234°F to 240°F).
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Quickly pour the hot caramel over the bowl of nuts and graham crackers. Mix thoroughly until all the dry ingredients are well coated.
  6. Allow the mixture to cool slightly until it's safe to handle. Then, using your hands, form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  7. If you’re adding a chocolate coating, melt the semi-sweet chocolate chips in a microwave or double boiler until smooth. Dip each caramel ball into the melted chocolate.
  8. Sprinkle a pinch of sea salt on top of the chocolate-covered balls if desired. Refrigerate for at least 30 minutes.
