  2. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  3. Stir in diced onion and minced garlic. Sauté for 3-4 minutes until onion is translucent, then season with Italian seasoning, salt, and pepper.
  4. Combine zucchini rounds with olive oil and garlic powder in a mixing bowl and toss to coat.
  5. In a greased 9x13 inch baking dish, layer half of the zucchini, then pour the beef mixture over it. Top with the remaining zucchini.
