Ingredients

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 medium zucchinis, sliced into 1/4-inch rounds
- 1 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil or parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
- Stir in diced onion and minced garlic. Sauté for 3-4 minutes until onion is translucent, then season with Italian seasoning, salt, and pepper.
- Combine zucchini rounds with olive oil and garlic powder in a mixing bowl and toss to coat.
- In a greased 9x13 inch baking dish, layer half of the zucchini, then pour the beef mixture over it. Top with the remaining zucchini.
- Sprinkle shredded mozzarella cheese and grated Parmesan cheese on top.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Let cool for 5 minutes, garnish with fresh basil or parsley, and serve hot.
