A timeless dish that combines tender chicken with a variety of flavors and textures, making it a favorite for lunches, picnics, and potlucks.
Ingredients
Scale:
2 cups cooked, shredded chicken (rotisserie chicken works great)
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/2 cup grapes, halved (optional)
1/2 cup mayonnaise (can substitute with Greek yogurt)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste
1/4 cup chopped walnuts or pecans (optional)
Fresh herbs like dill or parsley, for garnish (optional)
Instructions
Prepare the Chicken: If using rotisserie chicken, remove the skin and bones, then shred the meat into bite-sized pieces. If you prefer cooking your own chicken, boil or grill chicken breasts until fully cooked, then shred.
Mix the Dressing: In a large bowl, combine the mayonnaise, Dijon mustard, lemon juice, and a pinch of salt and pepper. Mix until smooth and creamy.
Add the Chicken and Vegetables: To the bowl with the dressing, add the shredded chicken, chopped celery, red onion, and grapes (if using). Stir gently until everything is evenly coated.
Incorporate Nuts: If you’re adding nuts, fold them in at this stage.
Taste and Adjust: Sample your chicken salad and adjust the seasoning with more salt, pepper, or lemon juice, if necessary.
Chill and Serve: Cover the bowl and refrigerate the chicken salad for at least 30 minutes before serving.
