2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
1/2 cup unsalted butter, cold and diced
3/4 cup buttermilk, chilled
1 cup diced ham
1 cup shredded cheddar cheese
1 tablespoon chopped fresh chives (optional)
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
Add the diced butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center of the dry ingredients and pour in the chilled buttermilk. Stir gently with a fork until the dough just comes together.
Gently fold in the diced ham and shredded cheese. If using chives, add them at this stage.
Turn the dough out onto a lightly floured surface. Pat or roll it into a rectangle about 1/2 inch thick. Fold the rectangle into thirds, then roll it out again, repeating this process twice.
Use a biscuit cutter or a round glass to cut out biscuits, pressing straight down without twisting.
Place the biscuits on the prepared baking sheet, ensuring they are close but not touching. Bake for 12-15 minutes, or until the tops are golden brown.
Remove from the oven and let the biscuits cool slightly on a wire rack before serving warm.
