Ingredients
Scale:
1 ¾ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ cups granulated sugar
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
8 oz cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
2 teaspoons vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
Incorporate Boiling Water: Carefully stir in the boiling water. The batter will be thin, which is normal.
Bake the Cakes: Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cool the Cakes: Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to wire racks to cool completely.
Prepare the Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla, beating until fluffy.
Assemble the Cake: Place one layer of the chocolate cake on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer of cake on top and frost the top and sides of the cake with the remaining cream cheese frosting.
Make the Whipped Cream: In a separate bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
Top the Cake: Spread the whipped cream topping over the frosted cake, creating a light and airy finish.
