4 boneless, skinless chicken breasts
1 medium onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup fresh spinach, roughly chopped
1 cup heavy cream
1 cup chicken broth
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
½ cup grated Parmesan cheese
Fresh basil leaves, for garnish
Instructions
Season the chicken breasts liberally with salt, pepper, and half of the dried oregano and basil. Let them sit for about 10 minutes.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for approximately 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add the chopped onion, garlic, and diced red bell pepper. Cook for 3-4 minutes until tender.
Stir in the chopped spinach and cook for an additional 1-2 minutes until it wilts.
Pour in the chicken broth and heavy cream. Stir well and let simmer for about 5 minutes to thicken.
Return the chicken to the skillet, spoon sauce over it, and sprinkle with remaining oregano and basil. Simmer for another 5 minutes.
Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves before serving.
