This easy Lebkuchen recipe transforms the classic gingerbread into chewy, nutty dessert bars, perfect for sharing with family and friends during Christmas gatherings.
Ingredients
Scale:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup finely chopped nuts (almonds or hazelnuts)
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/2 cup honey
1 large egg
1 teaspoon vanilla extract
1/2 cup chocolate chips or melted dark chocolate for drizzling
Instructions
Preheat the oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
In a medium bowl, whisk together the flour, baking powder, spices, and salt until evenly combined.
In a large mixing bowl, use an electric mixer to beat the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
Beat in the honey, egg, and vanilla extract until well incorporated.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
Gently fold in the chopped nuts.
Pour the batter into the prepared baking pan, spreading it evenly.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and drizzle with melted chocolate once completely cooled.
