Ingredients
Scale:
2 cups all-purpose flour
1/4 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
Additional powdered sugar for dusting
Chocolate or icing for drizzling (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, cornstarch, salt, and baking powder until well combined. Set aside.
In a large mixing bowl, beat the softened butter and powdered sugar together on medium speed until light and fluffy, about 3-4 minutes.
Add the vanilla and almond extracts to the butter-sugar mixture, mixing until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Using a cookie scoop or your hands, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake the cookies for 12-15 minutes or until the edges are set and tops are lightly golden.
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Dust with powdered sugar once cool.
