2 cups semisweet chocolate chips
1 tablespoon coconut oil (optional)
1 cup pecans, chopped
1/2 cup light brown sugar, packed
1/4 cup corn syrup
1/4 cup unsalted butter, at room temperature
1 teaspoon vanilla extract
1/4 teaspoon salt
Additional chopped pecans, for garnish
Sea salt flakes, for topping
Instructions
Line a 9x13 inch baking dish with parchment paper or aluminum foil.
In a microwave-safe bowl, combine semisweet chocolate chips and coconut oil. Microwave in 30-second intervals until melted.
Pour the melted chocolate into the prepared baking dish and spread evenly.
Chill the base in the refrigerator for about 15-20 minutes until firm.
In a medium saucepan over medium heat, combine chopped pecans, brown sugar, corn syrup, butter, vanilla extract, and salt. Stir until bubbly.
Pour the pecan filling over the chilled chocolate layer and spread evenly.
Return to the refrigerator for an additional 30 minutes to firm up.
Sprinkle additional chopped pecans and sea salt flakes on top.
