Ingredients
Scale:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup crushed pineapple (drained, reserve juice)
2 large eggs
½ cup vegetable oil or melted coconut oil
1 teaspoon vanilla extract
½ cup chopped walnuts or pecans (optional)
Powdered sugar (for dusting, optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal after baking.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until thoroughly combined.
In another bowl, beat the eggs and then add the crushed pineapple, vegetable oil, and vanilla extract. Mix well until fully integrated.
Pour the wet ingredients into the dry ingredients, and gently fold together using a spatula until just combined.
If desired, fold in the chopped nuts.
Transfer the batter to the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove the bread from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
