Ingredients
Scale:
1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
¼ cup granulated sugar
1/4 teaspoon salt
3-4 tablespoons ice water
1 cup unsalted butter
2 cups granulated sugar
1 cup packed brown sugar
4 large eggs
1 teaspoon vanilla extract
1 cup unsweetened cocoa powder
1 cup all-purpose flour
½ teaspoon salt
1 cup chocolate chips (optional)
Instructions
Prepare the Pie Crust: In a mixing bowl, combine 1 ½ cups of flour, ½ cup of cold, cubed butter, ¼ cup of granulated sugar, and ¼ teaspoon of salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, mixing until the dough holds together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the Oven: Preheat your oven to 350°F (175°C).
Roll Out the Crust: On a floured surface, roll out the chilled dough to fit your pie pan. Transfer the crust to the pie pan and trim any excess. Prick the bottom with a fork to prevent bubbling.
Bake the Crust: Pre-bake the crust for about 10 minutes, until lightly golden. Remove it from the oven and set aside to cool slightly.
Prepare the Brownie Filling: In a saucepan over low heat, melt 1 cup of butter. Once melted, remove from heat and stir in 2 cups of granulated sugar and 1 cup of brown sugar until combined.
Add 4 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
In another bowl, whisk together 1 cup of cocoa powder, 1 cup of flour, and ½ teaspoon of salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Fold in chocolate chips if desired.
Combine and Bake: Pour the brownie batter into the pre-baked pie crust, smoothing the top as needed. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Allow the pie to cool on a wire rack before serving. Enjoy warm or at room temperature!
