2 pounds of beef chuck, cut into 1-inch cubes
3 tablespoons of olive oil
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 cups beef broth
1 cup red wine (optional)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
3 cloves garlic, minced
2 large onions, chopped
4 carrots, sliced
3 potatoes, peeled and diced
2 bay leaves
1 teaspoon thyme
1 teaspoon rosemary (optional for added aroma)
Chopped parsley for garnish

Instructions
In a large bowl, combine the flour, salt, and black pepper. Coat the beef cubes with the flour mixture.
Heat the olive oil in a skillet over medium-high heat. Brown the beef in batches, ensuring all sides are seared. Transfer to the slow cooker.
In the same skillet, add the garlic and onions. Sauté until the onions are translucent. Add to the slow cooker.
Add the carrots, potatoes, tomato paste, Worcestershire sauce, bay leaves, and thyme to the slow cooker.
Pour the beef broth and red wine over the ingredients. Stir well to combine.
Cover and cook on low for 8 hours, or until the beef is tender and the vegetables are cooked through.
Before serving, remove the bay leaves and adjust seasoning if necessary. Garnish with parsley.
