1 cup granulated sugar (for the caramel)
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk
3 large eggs
1 tablespoon vanilla extract
Pinch of salt
2 cups whole milk
1/2 cup granulated sugar
3 large egg yolks
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 tablespoon unsalted butter
Instructions
Preheat your oven to 350°F (175°C). Prepare a water bath by filling a baking dish halfway with water.
In a saucepan over medium heat, melt 1 cup of sugar until it turns into a golden caramel. Pour into the bottom of a 9-inch round baking dish.
Combine sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt in a blender. Blend until smooth.
Pour the milk mixture over the caramel in the baking dish. Cover with aluminum foil.
Place the baking dish in the water bath and bake for 50-60 minutes until a knife inserted in the center comes out clean.
Cool to room temperature, then refrigerate for at least 4 hours before serving.
For custard: Heat the milk over medium heat until steaming. In a separate bowl, whisk sugar, egg yolks, and cornstarch.
Add hot milk to the egg mixture, whisking constantly. Pour back into the saucepan.
Cook over low heat, stirring continuously until thickened. Remove from heat and stir in vanilla extract and butter.
