Instructions

  1. Prepare a 9x13 inch baking pan by greasing it with butter and lining it with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan, combine the granulated sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
  3. Increase the heat to high and bring the mixture to a boil. Do not stir. Cook until the syrup reaches 250°F (hard ball stage) on a candy thermometer, about 8-10 minutes.
  4. While the syrup is cooking, beat the egg whites in a large mixing bowl until stiff peaks form.
  5. Once the syrup reaches the desired temperature, remove it from heat. Slowly pour the hot syrup into the beaten egg whites while continuously mixing on low speed. Be careful, as the syrup is extremely hot.
  6. Once all the syrup is incorporated, increase the mixer speed to medium-high and beat for about 5-7 minutes, or until the mixture is thick and glossy.
  7. Fold in the chopped nuts and vanilla extract until evenly distributed.
  8. Transfer the nougat mixture to the prepared baking pan, spreading it evenly. Use a spatula dusted with powdered sugar to help flatten it without sticking.
  9. Allow the nougat to cool at room temperature for about 2-3 hours until it sets completely.
  10. Once set, melt the chocolate chips in a microwave or double boiler. Stir in vegetable oil if you prefer a thinner coating.
  11. Cut the nougat into bars or squares and dip each piece into the melted chocolate, allowing excess chocolate to drip off. Place the chocolate-covered nougat bars on a parchment-lined tray to set.
  12. Let the chocolate harden at room temperature or in the refrigerator for faster results.
