Description
A classic Italian-inspired dish, perfect for hot weather, as it's light, refreshing, and easy to prepare.
Ingredients
Scale:
- 8 oz. pasta (penne, fusilli, or bow tie)
- 2 cups mixed vegetables (cherry tomatoes, cucumber, bell peppers, carrots)
- 1 cup cheese (mozzarella, feta, or parmesan)
- 1/4 cup Italian dressing
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp. dried basil
- 1 tsp. dried oregano
- Salt and pepper to taste
- Optional: grilled chicken, olives, artichoke hearts, or other desired ingredients
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside to cool.
- In a large bowl, whisk together the Italian dressing, olive oil, garlic, basil, and oregano.
- Add the cooled pasta to the bowl and toss to coat with the dressing mixture.
- Add the mixed vegetables, cheese, and any optional ingredients to the bowl. Toss gently to combine.
- Season the pasta salad with salt and pepper to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the pasta salad a good stir and adjust the seasoning if needed.
