    • 3 packages caramels
    • 4.5 cups salted peanuts

Instructions

Step 1: Prepare the Base Layer

  1. Melt Chocolate and Peanut Butter: In a medium saucepan over low heat, melt the semi-sweet chocolate chips with ⅓ cup of peanut butter. Stir until smooth and well combined.
  2. Spread and Chill: Pour the mixture into a lined 9×13-inch baking dish, spreading it evenly to form the base layer. Refrigerate until firm, about 15-20 minutes.

Step 2: Make the Nougat Layer

  1. Combine Ingredients: In another saucepan, combine the granulated sugar, evaporated milk, and butter. Bring to a boil over medium heat, stirring constantly. Boil for about 5 minutes.
  2. Add Marshmallow and Peanut Butter: Remove from heat and quickly stir in the marshmallow cream, ⅓ cup of peanut butter, and vanilla extract until smooth.
  3. Spread Over Base: Pour the nougat mixture over the chilled chocolate layer, spreading it evenly. Return to the refrigerator to chill until set, about 15-20 minutes.

Step 3: Prepare the Caramel Layer

  1. Melt Caramels: In a microwave-safe bowl, melt the caramels with 2 tablespoons of water in 30-second intervals, stirring between each until fully melted and smooth.
  2. Add Peanuts: Stir in the salted peanuts until well combined.
  3. Spread Caramel: Pour the caramel and peanut mixture over the nougat layer, spreading it evenly. Refrigerate again until firm, about 15-20 minutes.

Step 4: Final Chocolate Layer

  1. Melt Chocolate and Butterscotch Chips: In a clean saucepan, melt the remaining semi-sweet chocolate chips with the butterscotch or peanut butter chips over low heat. Stir until smooth.
  2. Spread Over Caramel: Pour the chocolate mixture over the caramel layer, spreading it evenly to form the top layer.
  3. Chill to Set: Return the dish to the refrigerator and chill until the entire fudge is firm, about 2 hours or overnight for best results.

Step 5: Serve

  1. Cut and Serve: Once set, remove the fudge from the refrigerator. Lift it out of the baking dish using the lining, and place it on a cutting board. Cut into small squares using a sharp knife.
  2. Store: Store any leftovers in an airtight container in the refrigerator to keep the fudge firm and fresh.

Tips for Success

  • Lining the Dish: Use parchment paper or aluminum foil to line the baking dish, leaving some overhang to easily lift the fudge out once set.
  • Cutting: Use a sharp knife dipped in hot water to cut the fudge for cleaner slices.
  • Storage: Keep the fudge refrigerated until serving to maintain its firm texture.

Variations

  • Nut-Free Option: For those with nut allergies, omit the peanuts and substitute the peanut butter with sunflower seed butter or cookie butter.
  • Dark Chocolate: For a richer taste, use dark chocolate chips instead of semi-sweet.
  • Additional Toppings: Sprinkle the top layer with sea salt, crushed pretzels, or additional chopped nuts for extra texture and flavor.
